Through every iteration of Polly’s growth over the last demi-decade, one thing that has persisted throughout is this brewery’s love of hops, and how they’ve born an entire business that now looks after the livelihoods of fourteen team members from this love.
The Hop Studio felt like a natural extension of this love – showcasing the single most complex, wonderfully diverse ingredient they use in their process bar none. Named for its founding region in New Zealand and the Sauvingnon Blanc grape; Nelson Sauvin is an incredibly distinctive variety first released back in 2000 and widely described as the perfect summertime hop.
Possessing strong fruity aromas and flavours of tropical fruit, crushed gooseberries and wine grapes mingled with tangerine and grapefruit, they could only set this hop variety up for a whirl around the Hop Studio merry go round for an amped up DIPA.
