The formative years at Polly’s were characterised by an infamous “brew once and never again” policy, largely due to the limitations of their then brew kit. They’re now all about solidifying their status in 2025 amongst their peers, drinkers and fans by revisiting the beers they yearn for them to rebrew to apply all the techniques they’ve learned and continue to learn in their short existence.

Ghost Voices was a certified revolution when they first brewed it in 2020, and the updated version is taking things to the next level. A single hop Simcoe Double IPA, expect tangerines and candied oranges on the nose, follow up with a full, thick, pulpy mouthfeel; bursting with all those incredible passionfruit, mango and berry flavours, whilst retaining just a little bit of earthy bitterness to keep everything in line.
